Chicken Soup

Chicken Soup

 

1 tbsp EVOO

1 minced onion

1 cup chopped carrots

1 cup chopped celery

3-5 minced garlic cloves

1 bay leaf

1 tsp sea salt

1 tsp pepper

¼ tsp turmeric powder

2 tbsp Italian seasoning

16 ounces chicken bone broth

3-4 chicken breasts

¼ cup chopped fresh parsley (to add at the end)

Sauté onions, carrots, and celery in an instant pot for 2-3 minutes. Add garlic, bay leaf, turmeric powder, Italian seasoning, sea salt and pepper.

 

Add bone broth and chicken. Pressure cook the chicken until done then shred. Remove the bay leaf.

 

Dish into bowls and garnish with fresh parsley.

Kale White Bean Soup

Kale White Bean Soup

 

1 tbsp EVOO or avocado oil

1 sweet onion minced

3-4 large carrots chopped

3-4 celery sticks chopped

1-2 tbsp minced garlic

Salt and pepper to taste

1 Bay leaf

2 springs fresh rosemary

Tomato pure

3-4 cups bone broth or mineral broth

1 cup white beans, soaked and pressure cooked

1-2 handfuls of kale

Heat EVOO over medium heat. Add onions carrots and celery. Add garlic, salt, pepper, rosemary, and bay leaf, tomato, and broth. Mix, cover and cook 15-20 minutes. Add white beans and kale. Cover until the kale wilts. Remove herbs and serve.

Minestrone Soup

 

1 tbsp EVOO or avocado oil

1 sweet onion minced

3-4 large carrots chopped

3-4 celery sticks chopped

1-2 tbsp minced garlic

½ jar (1 cup) Jovial Crushed Tomatoes

Salt and pepper to taste

1 bay leaf

Pinch crushed red pepper flakes

1 tbsp Italian seasoning

3-4 cups bone broth or mineral broth

1 jar of Jovial Kidney Beans (soaked, rinsed, cooked)

1-2 handfuls of kale

Fresh parsley

Heat avocado oil. Sauté carrots, onions and celery until onions are translucent. Add garlic, salt, pepper, red pepper flakes, Italian seasoning.

Add tomatoes and broth. Cover and cook for 15 min. Add kale, kidney beans and parsley. Mix well and cook until kale wilts. Serve.
